Add palm sugar and this becomes a central Thai laab, which is a different dish with a different balance. The Isaan/Lao version runs on salt and acid alone.
The practical trap is that an under-salted laab reads as flat rather than as under-salted, and the instinct is to reach for sugar to fix it. Reach for fish sauce instead, then lime.
