Pecorino
Hard Italian cheese made from sheep milk. It is saltier and sharper than parmesan, with more acidity. Use it where the dish already holds much glutamate, such as a demi-glace sauce. Its acidity gives a bright edge. Parmesan adds more glutamate and makes such a dish heavier. Grate it fine so it melts on the hot pasta.
