Mixed bones
A bag of bones kept in the freezer from earlier cooking, with more than one animal in it. The share of each animal is usually not weighed. Write down which animals are in the mix. Chicken gives gelatin fast and has a mild taste. Lamb has a strong taste that sits in its fat, so trim the fat and remove the fat cap from the cold stock.
