Flat-leaf parsley

Petroselinum crispum var. neapolitanum. It has more aroma than curly parsley. The main aroma compounds are myristicin and apiole, with fresh green notes from terpenes. Chop it with a sharp knife just before use. A dull knife bruises the leaf and it goes dark.
