Celery
The leaf stalk of Apium graveolens. It is about 95 percent water. Its aroma comes mostly from phthalides, which also make a stock taste rounder and more savoury. In a stock, cut it into large pieces. Small pieces break down and cloud the liquid. Celeriac is the root of a related plant. It has its own taste and is not the same ingredient.
