Black malt vinegar
Malted barley vinegar, darkened with caramel. Not the same thing as Chinkiang vinegar, which is a glutinous-rice vinegar aged on a bran mash and has its own record here — the two were conflated under one alias and have been separated. Used in the biltong wash for its acidity and its caramel depth.
