Low sodium

A dish built to keep sodium low. Salt is added at the surface and at the end, not through the dish. Fermented pastes, cured meat, stock powder and bread are limited or moved to the side. Acid, chilli and toasted aromatics carry the taste instead. Salt substitutes are not used: they are potassium chloride.
